What to do with all this squash, zucchini, cucumbers...

Ah, the power producers of summer: yellow squash, zucchini, and cucumbers, to name a few.

We have fried, steamed, pickled, shredded, sandwiched, and done everything possible to the formentioned veggies to add a little variety to our menus, as they keep on churning out the produce from their industrious vines.

There is one little recipe that has changed our designs for squash... We have a lovely friend, whose origins lie in the South, and who brought a squash casserole to a small gathering at our house. An unassuming dish to look at, as well as in name (nothing particularly glamourous there, between "squash" and the classic American "casserole"), our first bites were followed by "Now what did you say this is, again?" and "What all is in this?". Our friend generously left the leftovers at our house, and later on, Hubby and I circled the last serving with forks poised (may the best man/woman win)...

With our friend's permission, I am going to share this simple, and tasty recipe with you. Which, by the way, is a staple dish in the South and which I believe she was quietly incredulous that we had never tasted or made it before.

Miss Jo's Squash Casserole
1 lb yellow squash (about one squash)
1 large onion
1/2 stick butter
2 beaten eggs
1 c. milk
1 c. cubed cheese
2 T. brown sugar
10 soda crackers
salt n pepper to taste

Cook cut-up squash and onions til tender (we steam them) and drain. Add melted butter, crackers, eggs, milk, sugar, salt and pepper. Mix well and add cheese (we do shredded b/c we're lazy). Pour into buttered 8x9 baking dish. Cover and bake at 300 degrees for one hour. If desired add bread crumbs to top with a touch of butter and 2 tsp brown suger.

Generally, as it's a sell-out at our house, I make a double batch in a 9x12 pan, and throw as much squash in as I can. Try it; it'll perk up your squash-for-dinner-again perspective.

    Makes one feel almost "famous".
    Just an extra note...the casserole can be made with yellow squash or zucchini, whatever is the most abundant at the moment. Soda crackers seem best for the mixing in...Ritz crackers will do if necessary...and entirely optional at the end of baking-uncover and add crushed Ritz crackers for a tasty topping (mix with 2 tsp brown sugar and melted butter, pop in the oven for a couple minutes until lightly toasted on top.)
    It is advisable to use a dish that allows room for expansion...as the squash cooks down and the juices can overflow in your oven...
